I had a craving for tuna casserole, and I decided to add a few things to it to make it a bit more tasty.
Ingredients
1 can chunk light albacore tuna in water
4 cups uncooked enriched bowtie noodles
3 cups steamed broccoli
1 can cream of mushroom soup
1 8 oz. low fat garden vegetable cream cheese
1/2 small onion, chopped
low fat grated cheddar cheese
1 cup low fat seasoned croutons
salt and pepper to taste
parsley flakes (optional)
Directions
Cook pasta until tender. Combine all ingredients in a baking pan or dish except grated cheese, croutons, and parsley flakes. Evenly top with croutons. Bake in preheated oven of 325 degrees for 20 minutes. Top with cheese and bake for an additional 15 minutes. Sprinkle a little parsley flakes on top before serving.

Today was my first day at getting back to my workouts. I felt amazingly energized and just plain ready to start my day. I did a low-impact workout this morning. I will be doing various ones throughout the weeks ahead. I will also be doing some stretching, some crunches, and other floor work that will strengthen my muscles that have grown a tad week from not using them for awhile.
I know this will be a slow process, as I don’t want to do too much at once and end up injuring myself. That wouldn’t be too good.
I have been watching Devin Alexander from the cooking show “Healthy Decadence” There are some links for you to visit below. She has tons of excellent cooking tips along with great healthy recipes. I will be showing some of them to you in the next few weeks, as I will be trying them out myself (including some photos of my finished recipes).

Healthy Decadence: Thai Peanut Noodle Salad

This recipe is one of my Mom’s favorites. She cooked this once per week. Very good!
2 Servings
Ingredients
2 small, lean pork chops
1 cup Uncle Ben’s natural whole grain brown rice
1 tbs I can’t believe it’s not butter
1 can stewed tomatoes
1/2 cup frozen corn
2 tsp parsley flakes
salt and pepper to taste
Directions
Grill pork chops for about 20 minutes (I like those grill marks)
Meanwhile, combine rice and 2 cups water in a saucepan.
Bring rice to a boil. Reduce heat and simmer covered for 20 minutes.
Place the grilled pork chops in 9 x 9 baking pan.
Combine rice, butter, stewed tomatoes, corn, and parsley flakes in a mixing bowl.
Pour rice and tomato mixture over pork chops, fluff mixture with a fork around pork chops and bake in preheated 350 degree oven (uncovered) for 45 minutes. Serve with your favorite side dish or salad.
(I had a small salad with mine)

Ingredients
2 servings
2 skinless, boneless chicken breasts, chopped
romaine lettuce
spinach greens
1/2 small onion, chopped
1 small tomato, chopped
cucumber slices
shaved carrots
1/2 cup low fat shredded cheddar cheese
2 tbsp light italian wishbone dressing
salt and pepper to taste
Directions
Thoroughly wash chicken. Spray a small amount of cooking spray onto grill. Season chicken lightly with salt and pepper and place on grill. Cook for approximately 45 minutes, (cooking time can vary depending on what type of grill you have). Chop chicken into bite-sized pieces.
Thoroughly wash romaine lettuce and spinach greens, put into large bowl. Toss all ingredients except for a small portion of the chicken and cheese. Mix well. Top with shredded cheese and remaining chicken.
This dish was my dinner last night, very tasty.

Ambrosia Salad (My Sister-In-Law’s Recipe)
Ingredients
2 cups shredded coconut
1 8oz container whipped cream, thawed
1 11oz can madarin oranges, drained
3 apples, peeled and chopped
3 bananas, sliced
1 8oz can pineapple chunks, drained
1 10oz jar maraschino cherries, drained
3 cups miniature marshmallows
Optional: 1/2 cup chopped walnuts
Directions
In a large bowl, combine the whipped cream, coconut, chopped nuts (if desired), apples, pineapple, mandarin oranges, marshmallows, and cherries. Mix together well and refrigerate for 30 to 45 minutes.
Important Tip: Wait until right before serving to peel and add the bananas to help preserve them from turning brown.
