S'mores Ice Cream


  • 2 cups heavy whipping cream
  • 1 can (14 oz.) sweetened condensed milk (not evaporated milk!)
  • 2 tsp. vanilla
  • 1/4 cup cocoa
  • 4 granola squares (from a box of 10) Nature Valley Granola Thins, dark chocolate flavor
  • 1 cup miniature marshmallows


1 _ Using a stand mixer or hand mixer, whip cream until soft peaks form. Do not over beat. Add sweetened condensed milk and vanilla and mix slowly to combine. Add cocoa and mix slowly to combine well.

2 _ Chop each granola square into 9-12 pieces (so chunks are as big as you prefer). Stir in granola chunks and mini marshmallows gently BY HAND with a spatula until granola and marshmallows are well distributed in the creamy mixture.

3 _ Spoon ice cream into a freezer-safe container and cover so it is airtight. Place in freezer overnight (or at least 4-5 hours), until thoroughly hardened. Allow to sit at room temperature a few minutes before scooping. To serve, garnish with whipped cream, chocolate syrup and crushed granola thins, if desired.
