Chocolate and Coffee Cake


For the cake:
  • 2 cupsall-purpose flour
  • 2 cupssugar
  • 1 cupvegetable oil
  • 1 cupwarm brewed coffee
  • 3/4 cupmilk
  • 2eggs, at room temperature
  • 1 teaspoonbaking powder
  • 2 teaspoonsbaking soda
  • 2/3 cupunsweetened cocoa powder
  • 1/4 teaspoonsalt
  • 1/2 teaspoonvanilla extract
For the ganache:
  • 200 g (7 oz.)semi-sweet chocolate, coarsely chopped
  • 1 cupheavy cream
  • 1 tablespoonsugar
  • 1 teaspoonbutter


1_ Preheat the oven to 180°C/350°F.

2_ Coat a round cake tin with the butter and dust with some flour.

3_ Sift the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Add the sugar and combine all.

4_ To another bowl, add the oil, eggs, vanilla extract, brewed coffee and milk. Beat with an electric mixer for 1 minute.

5_ Pour the wet ingredients over the dry ingredients. Now mix gently with a wooden spoon just to homogenize the mixture.

6_ Pour the batter into the cake tin evenly.

7_ Bake for 40-45 minutes, or until you insert a skewer in the center of the cake and it comes out clean.

8_ Remove from the oven and set aside to cool down.

9_ Prepare the chocolate ganache:

10_ Pour the chocolate in a heat-proof bowl.

11_ In a small heavy saucepan, heat the cream and bring just to a boil.

12_ Directly pour over the chopped chocolate.Stir in the sugar and butter. Set aside.

13_ Allow the ganache to slightly cool down. Invert the cake onto a large dish. Drizzle the chocolate ganache on top.
