Oatmeal cinnamon cookies


  • 214 grams soft butter or margarine I used flora light
  • 200 grams sugar or 20g sweetner I used sweetner
  • 200 grams brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 250 grams plain flour
  • 1 tsp baking soda/bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 400 grams Quick oats I used mornflake medium stoneground oatmeal for lower calories +


1_ Pre heat oven 350/175°

2_ Weigh together butter and both sugars in a big mixing bowl

3_ In another bowl weigh together flour, cinnamon, soda, baking powder & salt and set aside.

4_ In a container or bowl weigh out quick oats

5_ Cream butter and sugars till light and fluffy

6_ Beat in the eggs and vanilla extract

7_ Combine the flour mix until smooth

8_ Stir in the oats until mixed well.

9_ If you can form into balls form into 1-1/2" and put on UNGREASED baking tray 2" apart or services a teaspoon. I made 45 medium to large.

10_ Cook for 12-15 minutes until edges are golden brown

11_ Take out oven, cool a little then transfer to wire rack. I used liner 1st time and u greased tray 2nd.

12_ Continue until all mixture used.
