Peanut Butter Cheesecake

Ingredients

  • 1 1/4 cupchocolate graham cracker crumbs
  • 1/4 cupbutter, melted
  • 8 oz5 packages ( each) cream cheese, softened
  • 1 1/2 cupwhite sugar
  • 3/4 cupcreamy peanut butter
  • 2 tspvanilla extract
  • 3eggs, lightly beaten
  • 110 Reese's Peanut Butter Cups (chopped)

Instructions

1_ Preheat oven to 350°.

2_ Mix together graham cracker crumbs and 1/4 cup melted butter.

3_ Press mixture into the bottom of a 9 1/2-inch springform pan.

4_ Bake 10 minutes; remove from oven and set aside.

5_ Keep the oven on.

6_ In a large bowl, beat cream cheese and sugar until smooth.

7_ Add peanut butter and vanilla; mix well.

8_ Add eggs; beat on low just until combined.

9_ Stir in chopped Peanut Butter Cups.


10_ Pour over the crust.

11_ Bake at 350° for 50-55 minutes or until center is almost set.

12_ Turn off oven, and leave oven door open. Leave cheesecake to rest for 45 minutes.

13_ Cool on a wire rack for 10 minutes.

14_ Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.

15_ Refrigerate overnight.

16_ Remove sides of pan.
