Apple Pie Bread

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/3 cup buttermilk
  • 2 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cup all-purpose flour
  • 1/2 tsp Apple pie spice
  • 1/2 tsp salt
  • 2 cup peeled and diced granny smith apples
Streusel topping
  • 1/4 cup packed brown sugar
  • 1/2 tsp cinnamon
  • 3 tbsp all-purpose flour
  • 2 tbsp butter, softened
  • 1/3 cup chopped pecans (optional)

1_ Preheat oven to 350°

2_ Grease the bottom and sides of a 9x13 inch loaf pan. If using a glass loaf pan, bake at 325°

3_ In a large bowl beat the butter and sugars together until combined. Add the buttermilk and baking powder; and beat until combined.

4_ Add eggs and vanilla; and beat until combined. Add flour, apple pie spice and salt; beat until combined.

5_ Toss the apples in a bit of flour before adding to the batter. By hand stir in the apples.

6_ Pour batter into prepared pan and spread evenly. Prepare the streusel topping. In a small bowl combine the brown sugar, cinnamon and flour. Using a pastry blender or fork cut in the butter until it resembles coarse crumbs.

7_ Stir in pecans and sprinkle topping over batter. Bake for 1 hour or until a wooden toothpick inserted near the center comes out clean.

8_ Cool bread in pan on a wire rack for 10 minutes. Remove from pan and cool completely.

9_ Another use for this bread is french toast! Put in fridge overnight to get cold. Slice thick the next morning and make some hellacious french toast!
