Banana Bread!


  • 110 g Butter- Room Temperature
  • 130 g Caster Sugar
  • 2 Large Eggs
  • 240 g Self Raising Flour
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 3 Large Ripe Bananas + 1 for Decoration
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Ginger (optional)


1_ Preheat your oven to 180 C degrees and grease a loaf pan ready for the batter.

2_ Cream together the butter, sugar and vanilla in a medium bowl.

3_ Add in the eggs and mix until just combined.

4_ In a separate bowl, mix the flour, baking soda, cinnamon and ginger and sift gradually over the butter mixture, folding with a spatula as you go along.

5_ In a small bowl, mash the bananas and add to the batter and gently fold.

6_ Note: At this point if you wish you could add in some chopped nuts or even some raisins.

7_ Pour the batter into the well greased loaf pan.

8_ Slice up the extra banana in very thin slices and neatly line them in the middle of the pan over the batter.
Finally, lightly sprinkle with sugar (preferably brown sugar).

9_ Place in the oven for approximately 50 mins, or until a toothpick inserted and comes out clean.

10_ If your really need to, you can cover the top with tin foil after 25 mins, to prevent it from browning too much. But that depends on your oven.

11_ When it's ready, take out into a cooling rack and wait for it to cool completely before serving.

12_ Serve with a scoop of ice cream, or just on its own with a cup of your favourite hot drink. Enjoy!!!! :)
