Rhubarb Dessert


  • 1 1/2 cup all-purpose flour
  • 4 tbsp granulated sugar
  • 1/2 cup butter
  • 4 egg yolks
  • 1 cup whipping cream
  • 1 3/4 cup granulated sugar
  • 5 tbsp all-purpose flour
  • 5 cup finely chopped rhubarb
  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/2 tsp almond extract
  • 5 tbsp granulated sugar


1_ Mix the ingredients for the crust together in a bowl.

2_ Pat the mixture into an 11x8 baking pan and bake in the oven at 350 for 10 minutes.

3_ Mix the egg yolks, whipping cream, sugar, and flour in a mixing bowl.

4_ Mix in the finely chopped rhubarb.

5_ Pour the filling on top of the crust and bake in the oven at 350 for 40-45 minutes.

6_ For the next steps with the meringue, DO NOT USE PLASTIC! This will kill your meringue due to oils in the plastics. Use metal or glass!

8_ To make the meringue, add the egg whites, cream of tartar, and almond extract. Beat until foamy.

9_ Slowly and gradually add the sugar one tablespoon at a time until each tablespoon is completely mixed in before you add the next.

10_ Using a metal spoon and knife, place the meringue on the baked custard. Add some swirls to make it look nice.

11_ Finally bake for 10 - 15 minutes at 350.
