Sunshine's green Chile ,bacon cheese pie


  • 19" inch pie crust ( ready to bake)
  • 1 packages Cheddar & monterey jack cheese 8.oz
  • 3 lg eggs slightly beaten
  • 1 cup half and half
  • 14.oz can green chiles (diced)
  • 1/4 cup real bacon bits
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/8 tsp black pepper


1_ Line a 9"inch pieplate with pie crust , trim excess pastry around edges, prick bottom and sides of pastry shell with a fork , place in refrigerator for 1 hour, then bake at 375° for 10 minutes. Let cool on rack

2_ Spread 1 1/2 cup of the cheese in pie shell evenly,

3_ Mix eggs ,half-and- half, chiles salt, bacon bits , pepper and cumin: beat until blended.

4_ Pour in to pie shell, put in oven and bake for 30 minutes , cover with foil take out sprinkle with the rest of cheese , uncover pie ,place back in for 10 minutes more or until set..turn on broil for 2 minutes .take out of oven ,Let stand 15 minutes on rack. before serving...enjoy.


  1. Pretty sure that's supposed to be (1) 9" pie and not a 19" pie. Right?
