Stuffed Chicken parmesan meatloaf


  • 2 pounds ground chicken
  • 2 eggs
  • 1/4 cup Parmesan
  • 1 tsp. Italian seasoning
  • 1/4 cup bread crumbs
  • 1 cup mozzarella shreds
  • 1 cup marinara of choice


1_ Pre heat oven to 350°

2_ Mix together chicken, egg, parmesan, onion, 1/2 cup of sauce, italian seasoning and bread crumbs. Set aside.

3_ Mix mozzarella and remaining sauce.

4_ Divide chicken mixture in half. Put first half in loaf pan. Making a indentation down the middle for cheese mixture.

5_ Add cheese mix and top with second half of the chicken mixture. Pat to seal and form a loaf.

6_ Bake for 1 hour or until 165° internal temperature is reached. Serve with pasta if desired and extra sauce.
