This recipe turned out really, really good. :)

Ingredients

4 grilled (skinless) chicken breasts, chopped
2 cups steamed frozen green beans
1 1/2 cup cooked long grain white rice
1 cup low sodium chicken broth
1/4 cup chopped onion
1/4 tsp celery salt
1 tsp sugar
8 oz low fat cream cheese
salt and pepper to taste

Directions

Grill chicken breast about 40 minutes or until done. Let cool. Chop chicken up into bite sized pieces.
Cook rice according to package. You can use instant if desired. Steam green beans in a steamer or cook in microwave according to package.

Preheat oven to 350 degrees F.

Mix all ingredients in a 13 x 9 inch baking pan. Bake in oven for 45 minutes or until bubbly.

You can top with canned french fried onions if desired. (I didn’t have any on hand) ;)

I had a craving for tuna casserole, and I decided to add a few things to it to make it a bit more tasty. ;)

Ingredients

1 can chunk light albacore tuna in water
4 cups uncooked enriched bowtie noodles
3 cups steamed broccoli
1 can cream of mushroom soup
1 8 oz. low fat garden vegetable cream cheese
1/2 small onion, chopped
low fat grated cheddar cheese
1 cup low fat seasoned croutons
salt and pepper to taste
parsley flakes (optional)

Directions

Cook pasta until tender. Combine all ingredients in a baking pan or dish except grated cheese, croutons, and parsley flakes. Evenly top with croutons. Bake in preheated oven of 325 degrees for 20 minutes. Top with cheese and bake for an additional 15 minutes. Sprinkle a little parsley flakes on top before serving.

This recipe is one of my Mom’s favorites. She cooked this once per week. Very good! :)

Ingredients

2 small, lean pork chops
1 cup Uncle Ben’s natural whole grain brown rice
1 tbs I can’t believe it’s not butter
1 can stewed tomatoes
1/2 cup frozen corn
2 tsp parsley flakes
salt and pepper to taste

Directions

Grill pork chops for about 20 minutes (I like those grill marks)

Meanwhile, combine rice and 2 cups water in a saucepan.
Bring rice to a boil. Reduce heat and simmer covered for 20 minutes.

Place the grilled pork chops in 9 x 9 baking pan.
Combine rice, butter, stewed tomatoes, corn, and parsley flakes in a mixing bowl.

Pour rice and tomato mixture over pork chops, fluff mixture with a fork around pork chops and bake in preheated 350 degree oven (uncovered) for 45 minutes. Serve with your favorite side dish or salad.
(I had a small salad with mine)

Ingredients

4 cans cut green beans, drained
1 can cream of mushroom soup
1 container (8 oz.) sour cream
1 cup crushed corn chips (3 oz.)

Directions
Heat oven to 350 degrees F. In ungreased casserole pan, place green beans. In medium bowl, mix soup and sour cream, stir into beans. Bake 20 minutes

Remove from oven. Stir mixture, bake 15 to 25 min longer until hot and bubbly. Sprinkle with corn chips. Bake 5 to 10 min longer until bubbly around edges.


This one is a special recipe of my Sister’s, we have it every holiday season. :)

Ingredients

32 oz frozen hash browns
1 small onion, chopped
1/2 cup melted butter
1 can cream of chicken soup
1 8 oz tub of sour cream
1 bag shredded cheddar cheese
Salt and pepper to taste
Optional: 1 cup crushed corn flakes or potato chips

Directions

Mix onion, soup, sour cream, and cheese in bowl.

Place potatoes in 9 x 13 baking dish. Pour melted button on top. Then stir in mixture of remaining items.

Sprinkle corn flakes or potato chips on top. Bake uncovered @ 350 degrees for 45-50 minutes.
